Spicy Cauliflower Stir Fry

You can tell when summer swimsuit season is knocking at the door, because we all try to add in a few more healthy meal options into our diet – especially if you still like to enjoy things like the cold beer and sea salt garlic knots from last week’s post! This is a quick and easy side dish that goes well with proteins and adds a nice kick. Recipe and instructions below.

Spicy Cauliflower Stir Fry

Ingredients

1 head cauliflower
2 teaspoons vegetable oil
2 cloves garlic, minced
2 tablespoons soy sauce
Juice of 1 lime
2 green onions, sliced
1 tablespoon Sriracha or other hot sauce (more if you like it with extra kick)

Directions

Break up the cauliflower into large florets, then use your hands to break into small pieces.

Heat a large, heavy skillet over medium-high to high heat. Add the oil, then the cauliflower. After about 2 minutes of stirring the cauliflower continuously, add the garlic and cook (while stirring) for another minute or two (until some pieces are nicely browned), then turn the heat to low.

Add the soy sauce, lime juice and the sliced green onions (reserving some green onions for serving if you’d like a garnish). Stir and allow to cook for 1 minute, then add the hot sauce and stir until incorporated.

Serve hot in a bowl. If you want to doll up the dish a bit, sprinkle with sliced green onions on top and serve with lime wedges.
