Chicken with Balsamic Tomato Salad

Ever since learning the cooking method for chicken breasts that I shared in a previous post (link here), I’ve been looking for recipes that use this as a base. I love it when I can find a dish – like this one – where the rest of the recipe can be prepped in the 20 or so minutes during which I’m waiting for the chicken to cook on the stovetop. This is my favorite time of year for cooking, when things finally start to look fresh again in the grocery store. Perhaps not yet locally grown (we have to wait a while for that in Minnesota), but at least the basil comes in a small fresh grouping versus wilted and cramped in one of those sad little plastic containers. The recipe for this easy and healthy dish is included below.

Mother’s Day

My mom isn’t really a Mother’s Day kind of mom, having referred to it for as long as I can remember as a Hallmark holiday and insisting that we don’t make a fuss or spend our time or money scrambling for a gift or card. I don’t know if this was always the case, or something that came about when we were older, but I can tell you that I am very much not of this opinion about the holiday. I’m a pretty big fan, actually. And it’s not about gifts or cards for me either, really, it’s about having a day (or let’s face it, the weekend) to have things roll the way mama wants them to roll. This involves a little bit of sleeping in; a whole lot of cuddling with the kiddos (Taylor isn’t generally a fan of hugs and kisses, but on these days even he feels obligated to show mommy some love – similar to how Ella generally isn’t a fan of sharing her doughnuts with me, but on special days she’ll make an exception); and some alone time. The perfect day was capped off with watching the kids do a little fishing and then heading out to date night with Trevor at a crazy Mexican joint in a small town near our cabin.

Classic Black

I needed something conservative and classic the other day for a work event, and reached for one of my favorite black dresses. Driving to the event I remembered a time I wore the dress while at the law firm, then realized that meant I’d had it well over a decade. I suppose some closet maintenance rules would dictate that the dress should be long gone, but I happen to love it when I make a purchase that can stand the test of time. No better bet for that than a great black dress. I think this one has a good chance of lasting through the years, as it is conservative but has enough detail to keep it interesting with the buttons, pleats and dainty tie at the waist.
